This group of friends, 
Diane, Elna, Fay and Joy decided to take a vacation together in Umbria. Former classmates who now live around the world (Australia, England, Canada and South Africa) met in Umbria. Each day one of the girls decided to do an activity, and today Diane decided to learn how to make pasta! They were great! And we have prepared, TAGLIATELLE with gorgonzola and eggplants, spaghetti alla chitrra with caprese, ravioli filled with ricotta and mushrooms, maltagliati with courgettes.

We ate the rest of the pasta last night before leaving Italy. (Elna is still in Italy!)
We have a question…what can we do to make our pasta lighter and softer?

Pasta-lighter and softer: do not get tired on working your dough (first) and roll it as thin as possible….and keep on trying until you’ll reach the PERFECT PASTA!
