For the base:
240 gr flour
160 g butter
80 g white sugar
grated lemon rind
two yolks
For the condiment:1 kg. peaches
4 yolks
100 gr. sugar
50 gr. flour
500 ml. milk
Prepare the dough by working the butter (cold from the fridge) with the flour, to create a granular mixture. Now add the two egg yolks, the sugar and the grated lemon rind. Work all the ingredients for a few minutes. Wrap the dough with plastic wrap and let it rest in refrigerator.
Peel peaches and cut into slices and spread with a spoon of sugar. In the meanwhile let’s prepare the custard. Put in a pan the 4 yolks with the sugar and stir carefully. Now add the flour, add the cold milk. Put it on the fire and boil for 2 minutes. Take the dough from the fridge and roll it at 3 -4 cm. Put it in a oven pan, spread with the custard and put the peaches (without the liquid) over it. Cook in the oven at 180° for 30 minutes.
